All Food Service Establishments that are connected to the sanitary sewer should be aware of the F.O.G. program. Please see the memoranda from the Department of Environmental Protection for a detailed explanation. You will be required to install and external grease trap for your establishment within three years. For many operators this will be a major plumbing project which will require planning. The program is administered by the local Water Pollution Control Authority, W.P.C.A. Please contact the Chatham Health District or your Local W.P.C.A. with further questions. |
